Ingredients

  • 250 gbulgur
  • 1onion
  • 60 mlextra virgin olive oil
  • handfulparsley and mint
  • 2 tbsplemon juice

Method

  1. Begin by finely chopping 1 onion. Aim for uniform pieces to ensure even cooking and a balanced flavor throughout the dish.
  2. In a medium-sized saucepan, pour in 60 ml of extra virgin olive oil. Set the heat to medium and add the chopped onion. Stir occasionally and cook until the onion becomes translucent and releases a sweet, fragrant aroma, indicating it is properly softened.
  3. Add 250 g of bulgur to the saucepan with the onions. Stir well to coat the grains with the olive oil and onion mixture, ensuring each grain is glistening.
  4. Pour in enough water to cover the bulgur by about 1 cm. Increase the heat to bring the mixture to a gentle simmer. Once simmering, reduce the heat to low, cover the saucepan, and let it cook. The bulgur is ready when it has absorbed the water and is tender to the bite, with a light, fluffy texture.
  5. While the bulgur is cooking, finely chop a handful of parsley and mint. These herbs will add a fresh, aromatic quality to the dish.
  6. Once the bulgur is cooked, remove the saucepan from the heat. Stir in the chopped parsley and mint, ensuring they are evenly distributed throughout the bulgur.
  7. Add 2 tbsp of lemon juice to the mixture, stirring well to combine. Season with fine sea salt to taste, adjusting as needed to enhance the flavors.
  8. Serve the Herbed Bulgur warm, allowing the bright flavors of the herbs and lemon to shine through, reminiscent of a Mediterranean garden.
