Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Begin by peeling 1 kg of potatoes and cutting them into evenly sized cubes, about 1-inch each. This ensures that they cook uniformly and absorb flavors consistently.
  2. In a large, heavy-bottomed pan, heat 80 ml of oil over medium heat. The oil should be hot enough that a small piece of potato sizzles when added.
  3. Add the potato cubes to the pan, stirring to coat them evenly with the oil. Allow them to cook, stirring occasionally, until they start to turn golden brown on the edges, which should take about 10 minutes.
  4. Sprinkle 1 tsp of paprika over the potatoes, stirring well to ensure even distribution. This will add a warm color and a mild, smoky flavor to the dish.
  5. Continue to cook the potatoes, stirring occasionally, until they are tender when pierced with a fork. The exterior should be crisp and golden, while the inside remains soft and fluffy.
  6. Season the potatoes with fine sea salt and black pepper to taste, stirring to combine. Taste and adjust the seasoning as needed, keeping in mind that the salt should enhance the natural flavors of the potatoes.
