Kkakdugi

Serves 4 to 6 vegetarian

Kkakdugi

Kkakdugi is a staple in Korean homes, a comforting dish that accompanies many meals with its crisp and spicy presence. Unlike its more common cousin, napa cabbage kimchi, kkakdugi is made with diced radish, offering a more robust texture. This dish finds its place on the table year-round, but it is particularly cherished during the colder months when the hearty radish is in season, bringing warmth and depth to the meal.

The taste of kkakdugi is a vibrant interplay of spicy gochugaru, pungent garlic, and the briny depth of salted shrimp, all harmonized by the crunchy freshness of radish. Each bite is a burst of flavor that complements rice dishes and stews beautifully, making it an essential part of any Korean dining experience. The homemade touch ensures that each batch is unique, reflecting the cook's hand in balancing salt and spice.

Ingredients

  • 1cubed radish
  • 3 tbspgochugaru
  • 1 tbspsalted shrimp
  • 4garlic cloves
  • 2scallions
  • to tastefine sea salt

Method

  1. Begin by cutting the 1 cubed radish into evenly sized pieces, approximately 1-inch cubes. This ensures that the radish cooks uniformly and absorbs flavors consistently.
  2. Mince the 4 garlic cloves finely and slice the 2 scallions into thin rounds. Set these aside as they will be added later to enhance the flavor of the dish.
  3. Heat a large pan over medium heat and add a generous amount of oil. Once the oil is shimmering, add the minced garlic and sauté until fragrant, about 1-2 minutes, being careful not to let it burn.
  4. Add the cubed radish to the pan and stir to coat the pieces with the garlic-infused oil. Cook, stirring occasionally, until the radish begins to soften and becomes slightly translucent, which should take about 5-7 minutes.
  5. Sprinkle 3 tablespoons of gochugaru over the radish, stirring well to ensure each piece is coated with the spicy red pepper flakes. This will give the Kkakdugi its characteristic vibrant color and heat.
  6. Add 1 tablespoon of salted shrimp to the pan, mixing thoroughly. The shrimp will provide a deep umami flavor that complements the spicy and pungent notes of the dish.
  7. Toss in the sliced scallions and continue to cook until the radish is tender and the flavors have melded together, about 3-5 more minutes. The radish should be soft yet still retain a slight crunch.
  8. Taste the Kkakdugi and season with fine sea salt to your preference. The dish should be well-balanced with a hint of saltiness that enhances the overall flavor profile.
  9. Serve the Kkakdugi warm, allowing the flavors to shine. This dish is perfect for sharing, embodying the communal spirit of Korean home cooking.
