Lemon Rice

Lemon Rice, or 'Elumichai Sadam' as it is known in Tamil Nadu, is a classic dish that brings a burst of sunshine to the dining table. Often prepared for festivals and family gatherings, it's a dish that Tamil households have perfected over generations. The true charm of Lemon Rice lies in its simplicity and the artful way in which the flavors come together, making it a favorite for both special occasions and everyday meals.

The taste is a vibrant symphony of tangy lemon and the nutty crunch of peanuts, all enveloped by the warmth of mustard seeds and aromatic curry leaves. Each spoonful is light and refreshing, with a subtle richness from the generous use of oil, perfectly seasoned with just the right amount of salt. Enjoy it as a standalone dish or pair it with a side of yogurt for a complete meal experience.

Ingredients

  • 400 gcooked rice
  • 2 tbsplemon juice
  • 1 tspmustard seeds
  • 1 tbspchana dal
  • 10curry leaves
  • 2 tbsppeanuts
  • 2 tbspoil
  • to tastefine sea salt

Method

  1. Begin by heating 2 tablespoons of oil in a large, heavy-bottomed pan over medium heat. Once the oil is hot, add 1 teaspoon of mustard seeds. Allow them to sizzle and pop, which should take about 30 seconds. This releases their flavor into the oil.
  2. Add 1 tablespoon of chana dal and 2 tablespoons of peanuts to the pan. Stir continuously for about 2-3 minutes, until the dal and peanuts turn golden brown. This step ensures they are crunchy and flavorful.
  3. Add 10 curry leaves to the pan. Be cautious as they may splatter. Stir them in until they become crisp and release their aroma, which should take about 30 seconds.
  4. Add the 400 g of cooked rice to the pan. Gently mix the rice with the tempered spices, ensuring each grain is coated with the flavored oil. This helps the rice absorb the spices evenly.
  5. Pour 2 tablespoons of lemon juice over the rice. Stir well to combine, ensuring the lemon juice is evenly distributed throughout the rice. The rice should take on a bright, slightly glossy appearance.
  6. Season the rice with fine sea salt to taste. Mix thoroughly to ensure the salt is evenly incorporated. Taste and adjust the salt if necessary, aiming for a balanced, tangy flavor.
  7. Serve the Lemon Rice warm. The rice should be fragrant with the aroma of curry leaves and lemon, with a slightly crunchy texture from the peanuts and chana dal.
