Peruvian Potato Side

Peruvian Potato Side is a humble yet essential dish gracing many home tables across Peru. It's a staple that captures the simplicity and richness of Peruvian home cooking, often prepared with ingredients on hand and a sense of generous hospitality. Whether accompanying a weekday meal or a festive gathering, these potatoes are a reflection of everyday culinary tradition, seasoned by intuition and shared among family and friends.

The taste of this dish is a comforting blend of earthy potatoes, warm paprika, and the subtle heat of black pepper, all enveloped in the richness of oil. Salt is added by feel, enhancing the natural flavors without overpowering them. The potatoes emerge golden and tender, inviting you to savor each bite. This is a side that knows its place on the table, complementing without overshadowing the main course, a true testament to the balance and warmth of Peruvian home cooking.

Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Begin by peeling 1 kg of potatoes. Cut them into evenly sized cubes, about 2 cm each. This uniform size ensures that the potatoes cook at the same rate, preventing some pieces from becoming mushy while others remain undercooked.
  2. In a large skillet or wide saucepan, heat 80 ml of oil over medium heat. The oil should shimmer slightly, indicating it's hot enough to start cooking.
  3. Add one finely chopped onion to the hot oil. Stir occasionally and cook until the onion becomes translucent and soft, releasing its sweet aroma. This should take about 5-7 minutes, and the onion should not brown.
  4. Add the cubed potatoes to the skillet with the softened onions. Stir well to coat the potatoes in the oil and onion mixture, ensuring even cooking and flavor distribution.
  5. Sprinkle 1 tsp of paprika over the potatoes, stirring to combine. The paprika will add a warm color and a subtle smoky flavor to the dish.
  6. Continue to cook the potatoes, stirring occasionally, until they are tender. You can test for doneness by piercing a potato cube with a fork; it should slide in easily without resistance.
  7. Once the potatoes are tender, season them with fine sea salt and black pepper to taste. Stir well to ensure the seasoning is evenly distributed.
  8. Serve the Peruvian Potato Side warm, straight from the skillet. This dish is best enjoyed as part of a shared meal, embodying the communal spirit of Peruvian home cooking.
