  1. Begin by thoroughly washing the 800 g Swiss chard to remove any grit or dirt. Trim the ends of the stems, then separate the leaves from the stems. Cut the stems into 1 cm pieces and roughly chop the leaves into large, bite-sized pieces. This ensures even cooking, as the stems take longer to soften than the leaves.
  2. Peel and thinly slice the 4 cloves of garlic. In a large, heavy-bottomed skillet, pour in 60 ml of extra virgin olive oil and add the sliced garlic. Place the skillet over medium heat and gently warm the garlic until it becomes fragrant and just starts to turn golden. This infuses the oil with garlic flavor without burning it.
  3. Add the chopped Swiss chard stems to the skillet first, stirring them into the garlic-infused oil. Cook for about 3 to 4 minutes, stirring occasionally, until the stems begin to soften and become slightly translucent. This step ensures the tougher stems are tender before adding the more delicate leaves.
  4. Once the stems are tender, add the chopped Swiss chard leaves to the skillet. Toss them with the stems and garlic oil, allowing the leaves to wilt down. Continue cooking, stirring occasionally, until the leaves are tender and glossy, with a vibrant green color.
  5. Sprinkle chili flakes to taste over the cooked chard, adding a gentle heat that complements the garlic. Season with fine sea salt, tasting as you go to ensure the flavors are balanced.
