Vietnamese Potato Side

In the heart of Vietnamese home cooking, this potato side dish is a staple that brings simplicity and warmth to the family table. Though it might not boast a long history or a ceremonial occasion, its presence is felt in the everyday meals where comfort and nourishment are key. The dish reflects the Vietnamese approach of cooking by instinct, with salt measured by feel and a generous hand with oil, creating a dish meant for sharing.

The potatoes are tender yet hold their shape, kissed by the gentle heat of paprika, and seasoned with the earthy tones of black pepper. Each bite offers a satisfying contrast between the creamy interior and the crispy, golden exterior. It's a dish that perfectly complements any main course, offering a touch of familiarity and warmth in each forkful.

Ingredients

  • 1 kgpotatoes
  • 80 mloil
  • 1 tsppaprika
  • to tastefine sea salt and black pepper

Method

  1. Peel 1 kg of potatoes and cut them into evenly sized cubes, about 2 cm each. This ensures that they cook at the same rate, resulting in a uniform texture.
  2. In a large skillet or wok, heat 80 ml of oil over medium-high heat. Once the oil is shimmering, add the potatoes, spreading them out in a single layer to ensure even cooking.
  3. Stir the potatoes occasionally, allowing them to fry until they develop a golden-brown crust on the outside. This should take about 10-15 minutes, and the potatoes should be tender when pierced with a fork.
  4. Sprinkle 1 tsp of paprika over the potatoes, stirring well to coat them evenly. The paprika will add a subtle smoky flavor and a vibrant color to the dish.
  5. Season the potatoes with fine sea salt and black pepper to taste. Toss them gently to ensure the seasoning is distributed evenly throughout the dish.
  6. Transfer the seasoned potatoes to a serving dish and serve them warm. This dish is best enjoyed fresh, with its crispy exterior and soft, flavorful interior.
