Vada Pav

Serves 4 to 6 vegetarian

Vada Pav

Vada Pav is a quintessential Mumbai street food that has found its way into the hearts and homes of many. Born in the bustling lanes of Maharashtra's capital, it's a beloved snack for commuters and college students alike, offering a quick bite that satisfies both hunger and a craving for something spicy and comforting. This home version captures the essence of the city while bringing the process into your kitchen, where salt is judged by hand and oil is used generously.

Biting into a Vada Pav is a delightful experience — the crisp exterior of the besan-coated potato patty gives way to a soft, spiced interior, all tucked into a soft pav bun. The garlic chutney adds a punch of heat, while mustard seeds lend a subtle nutty flavor, making each bite a harmonious blend of textures and tastes. Serve it hot, and let the flavors transport you straight to Mumbai.

Ingredients

  • 4potatoes
  • 12pav buns
  • 150 gbesan batter
  • 1 tbspgarlic chutney
  • 1 tspmustard seeds
  • as neededoil — for frying
  • to tastefine sea salt

Method

  1. Begin by boiling 4 potatoes in a large pot of water until they are tender. You can check doneness by inserting a fork; it should slide in easily. Once cooked, drain the potatoes and allow them to cool slightly before peeling and mashing them in a large bowl until smooth.
  2. Season the mashed potatoes with fine sea salt to taste, ensuring the mixture is well-balanced. Add 1 tbsp of garlic chutney to the potatoes, mixing thoroughly to incorporate the flavors evenly throughout the mash.
  3. Heat a pan over medium heat and add a small amount of oil. Once the oil is hot, add 1 tsp of mustard seeds and let them crackle. This releases their flavor and aroma, which will infuse the dish.
  4. Add the seasoned potato mixture to the pan and cook it slowly, stirring occasionally. You want the mixture to become slightly dry and cohesive, which should take a few minutes. The mixture should hold together when pressed with a spatula.
  5. Remove the potato mixture from the heat and allow it to cool enough to handle. Shape the mixture into small, round patties that will fit comfortably inside the pav buns.
  6. Heat enough oil in a deep frying pan over medium-high heat for deep frying. Dip each potato patty into the 150 g besan batter, ensuring it is fully coated, and gently lower it into the hot oil. Fry until the batter is golden brown and crisp, turning occasionally for even cooking.
  7. Once the vadas are fried, remove them from the oil and drain on paper towels to remove excess oil. Taste one for salt and adjust if necessary before serving.
  8. To assemble the Vada Pav, slice the pav buns in half and spread a thin layer of garlic chutney on each side. Place a vada inside each bun, pressing gently to secure it. Serve immediately, allowing everyone to enjoy the fresh, hot vada pav.
