Barley Genfo Soup is a staple in the Ethiopian highlands, where its comforting aroma beckons families to gather around the table. In its simplicity, it captures the essence of daily Ethiopian cooking.

The soup offers a creamy texture, thanks to the barley flour, with an inviting blend of flavors. The niter kibbeh infuses it with rich, spiced butteriness, while the berbere adds a gentle heat that dances with the sweetness of sautéed onions and garlic. A dollop of plain yogurt brings a refreshing tang, balancing each spoonful perfectly.

Ingredients

  • 1 cupbarley flour
  • 6 cupswater
  • 1yellow onion — finely chopped
  • 2 clovesgarlic — minced
  • 1 tbspberbere
  • 3 tbspniter kibbeh
  • 1/2 cupplain yogurt — optional, to swirl in
  • 1 tspfine salt

Method

  1. Begin by finely chopping 1 yellow onion and mincing 2 cloves of garlic. This will ensure they cook evenly and release their flavors fully. Set them aside as you will use them shortly.
  2. In a large pot, melt 3 tablespoons of niter kibbeh over medium heat. Once the butter is melted and begins to emit a nutty aroma, add the chopped onion. Cook the onion, stirring occasionally, until it becomes soft and takes on a pale golden color, which should take about 4-5 minutes. This step is crucial for developing the base flavor of the soup.
  3. Add the minced garlic to the pot with the onions. Stir for about 1 minute until the garlic becomes fragrant, but be careful not to let it brown as it can become bitter. This short cooking time will ensure the garlic's sweetness is released.
  4. Sprinkle 1 tablespoon of berbere into the pot, stirring it into the onion and garlic mixture. Allow the spice to bloom in the hot fat for about a minute, which will help release its oils and deepen its flavor. You'll notice a rich, spicy aroma as the berbere heats.
  5. Gradually add 1 cup of barley flour to the pot, stirring continuously to prevent lumps from forming. Once the flour is incorporated, slowly pour in 6 cups of water, continuing to stir. Increase the heat to medium-high and bring the mixture to a simmer.
  6. Reduce the heat to medium-low and let the soup simmer gently. Stir occasionally, ensuring the barley flour doesn't settle at the bottom. The soup is ready when it thickens and the barley flour is fully cooked, giving the broth a smooth, slightly creamy texture.
  7. Stir in 1/2 cup of plain yogurt and 1 teaspoon of fine salt. Taste the soup and adjust the salt if necessary. The yogurt will add a subtle tang and creaminess to the soup, balancing the spices.
