Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing your ingredients. Peel and roughly chop 1 onion and 2 carrots. This will help release their flavors into the broth. Set them aside for the next step.
  2. In a large stockpot, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add the chopped onion and carrots. Stir occasionally, allowing them to soften and release their aromas without letting them brown. This process will take a few minutes and is crucial for building a fragrant base for your broth.
  3. Add 700 grams of chicken pieces to the pot. Stir them gently to coat with the oil and aromatics. Allow the chicken to cook until it turns opaque and starts to release its juices, which will add depth to the broth.
  4. Pour in 1.8 liters of water, ensuring the chicken and vegetables are fully submerged. Add 1 bay leaf for a subtle, earthy note. Increase the heat to high and bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat to low and let the broth simmer. Skim off any foam or impurities that rise to the surface with a spoon. Continue simmering until the chicken is tender and the vegetables are soft, which will take some time. The broth should be clear and aromatic.
  6. Taste the broth and season with fine sea salt and black pepper to your preference. Remember, the salt should enhance the flavors without overpowering them. Adjust as needed, tasting after each addition.
  7. Finish the broth by removing the bay leaf and discarding it. If desired, drizzle a thread of olive oil over the top for a richer finish. Serve the broth hot, ideally with a side of rice or noodles for a complete meal.
