Ezogelin Çorbası

Ezogelin Çorbası, a staple from southeastern Turkey, embodies a tradition of home-cooked comfort. Often served at family tables, this soup reflects the warmth and generosity of Turkish hospitality. The soup is a hearty blend of red lentils and bulgur, simmered with onions and garlic until they meld into a velvety texture. The addition of cumin and pepper paste brings a gentle warmth, while a squeeze of lemon at the table brightens each spoonful, cutting through the richness. It's a dish that comforts with its simplicity, inviting you to savor every layer of flavor.

Ingredients

  • 300 gred lentils
  • 1onion — chopped
  • 2 clovesgarlic
  • 1 tspcumin
  • 1.5 Lwater
  • 1 tbspolive oil
  • 1lemon — juiced
  • to tastefine sea salt and black pepper
  • 2 tbspbulgur
  • 1 tbsppepper paste

Method

  1. Start by finely chopping 1 onion and mincing 2 cloves of garlic. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, stirring occasionally, until the onion becomes translucent and the garlic is fragrant, about 5-7 minutes. Be careful not to let them brown, as this will affect the soup's flavor.
  2. Once the aromatics are softened, add 1 teaspoon of cumin and 1 tablespoon of pepper paste to the pot. Stir continuously for about 1-2 minutes until the spices are well incorporated and the mixture releases a rich aroma. This step enhances the depth of flavor in the soup.
  3. Rinse 300 g of red lentils under cold water until the water runs clear. Add the lentils to the pot along with 2 tablespoons of bulgur. Pour in 1.5 liters of water, stirring to combine all ingredients. Increase the heat to high and bring the mixture to a gentle boil.
  4. Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 20-25 minutes, stirring occasionally. The lentils should become tender and start to break down, creating a creamy texture. The bulgur will also soften, adding body to the soup.
  5. After the lentils and bulgur have reached the desired tenderness, taste the soup and season with fine sea salt and black pepper to your liking. Adjust the seasoning gradually, as the flavors will continue to develop as the soup sits.
  6. Finish the soup by squeezing the juice of 1 lemon into the pot, stirring well to incorporate the citrus. This will brighten the flavors and add a refreshing contrast to the rich, earthy base. Serve the Ezogelin Çorbası hot, garnished with a drizzle of olive oil if desired, and enjoy it as a comforting meal.
