Fisherman’s Home Stew

Ingredients

  • 600 gmixed white fish
  • 1onion
  • 2tomatoes
  • 3 clovesgarlic
  • 80 mlextra virgin olive oil
  • 100 mlwhite wine

Method

  1. Begin by finely dicing 1 onion and mincing 3 cloves of garlic. Heat 80 ml of extra virgin olive oil in a large, heavy-bottomed pot over medium heat. Add the onion and garlic to the pot, stirring occasionally. Cook until the onion becomes translucent and the garlic releases its aroma, about 5-7 minutes.
  2. While the onion and garlic are cooking, dice 2 tomatoes. Once the onion is translucent, add the tomatoes to the pot. Stir them in and cook until the tomatoes start to break down and meld with the onion and garlic, creating a fragrant base.
  3. Pour in 100 ml of white wine and add a pinch of saffron to the pot. Stir to combine, allowing the wine to deglaze the pot and lift any flavorful bits from the bottom. Let the mixture simmer until the wine reduces slightly and the saffron infuses the liquid with its color and aroma.
  4. Cut 600 g of mixed white fish into bite-sized pieces, ensuring any bones are removed. Gently add the fish to the pot, stirring to coat it with the aromatic mixture. Allow the fish to cook until it turns opaque and begins to flake easily, indicating it is cooked through.
  5. Chop a handful of parsley and add it to the stew, stirring to distribute the fresh herb throughout. Taste the stew and add fine sea salt to your preference, enhancing the flavors without overpowering the delicate fish.
  6. Finish the stew by drizzling a thread of extra virgin olive oil over the top. This adds a final layer of richness and ties together the flavors of the sea and the garden. Serve the stew with lemon wedges on the side, allowing each person to add a squeeze of fresh lemon to their taste.
