Ingredients

  • 400 gmixed vegetables — carrot celery potato
  • 1onion
  • 1.5 Lvegetable broth
  • 2 tbspolive oil
  • to tastefine sea salt and black pepper

Method

  1. Begin by finely chopping 1 onion. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion to the pot, stirring occasionally. Cook until the onion becomes translucent and soft, releasing a sweet aroma, but ensure it doesn't brown.
  2. Prepare 400 g of mixed vegetables by cutting them into bite-sized pieces. Choose a variety of vegetables like carrots, potatoes, peas, and green beans for a balanced texture and flavor. Add these vegetables to the pot with the softened onions, stirring to coat them well with the oil.
  3. Pour in 1.5 L of vegetable broth, stirring to combine with the vegetables. Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, allowing the soup to simmer gently.
  4. Simmer the soup until the vegetables are tender. Test by piercing a piece of carrot or potato with a fork; it should slide in easily without resistance. This indicates that the vegetables have cooked through and absorbed the flavors of the broth.
  5. Taste the soup and add fine sea salt and black pepper to your preference. Stir well to ensure the seasoning is evenly distributed. Before serving, you may finish with a drizzle of olive oil for added richness.
