Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf

Method

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 onion, roughly chopped, and 2 carrots, sliced into thick rounds. Stir occasionally, allowing the vegetables to soften and release their aroma. Ensure the heat is not too high to prevent the onions from browning, as this could alter the broth's flavor.
  2. Once the onions are translucent and the carrots have softened slightly, add 700 g of chicken pieces to the pot. Stir to coat the chicken in the oil and aromatics, allowing it to sear lightly. This step helps to build a deeper flavor base for the broth.
  3. Pour in 1.8 liters of water, ensuring the chicken and vegetables are fully submerged. Add 1 bay leaf to the pot. Increase the heat to high and bring the mixture to a gentle boil. Once boiling, reduce the heat to low to maintain a gentle simmer.
  4. Let the broth simmer gently, uncovered, for about 45 minutes. During this time, the chicken should become tender, and the flavors will meld together. Skim off any foam or impurities that rise to the surface to keep the broth clear.
  5. After 45 minutes, check the doneness of the chicken. It should be tender and easily pulled apart with a fork. The broth should have a rich aroma, and the vegetables should be soft but not falling apart.
  6. Season the broth with fine sea salt and black pepper to taste. Stir well and taste again, adjusting the seasoning if necessary. The broth should have a balanced, savory flavor with a hint of sweetness from the carrots.
  7. Remove the bay leaf before serving. Optionally, finish with a drizzle of olive oil for added richness. Serve the broth hot, ensuring each bowl has a good mix of chicken, vegetables, and broth.
