Unlike elaborate restaurant versions, this broth is crafted in the warmth of family kitchens, where salt is judged by hand and fat is embraced generously. It is often served at the family table, a comforting presence whether on a cool evening or as a healing remedy.

The broth is a gentle symphony of flavors, where tender chicken pieces meld with the earthy sweetness of carrots and the subtle sharpness of onion. The bay leaf adds a whisper of depth, while olive oil enriches every spoonful. Seasoned simply with fine sea salt and black pepper, it is both humble and satisfying, perfect for gathering around with loved ones.

Ingredients

  • 700 gchicken pieces
  • 1onion
  • 2carrots
  • 1.8 Lwater
  • 2 tbspolive oil
  • 1bay leaf

Method

  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Once the oil is shimmering, add 1 chopped onion and stir occasionally. Cook until the onion becomes translucent and soft, releasing its sweet aroma, but ensure it doesn't brown.
  2. Add 700 g of chicken pieces to the pot, stirring them with the softened onions. Allow the chicken to sear slightly, turning occasionally until the exterior turns a light golden color. This step helps to lock in the flavors and juices of the chicken.
  3. Introduce 2 chopped carrots to the pot, stirring them in with the chicken and onions. The carrots will add a subtle sweetness and depth to the broth as they cook.
  4. Pour in 1.8 liters of water, ensuring the chicken and vegetables are fully submerged. Add 1 bay leaf to the pot for a hint of earthy flavor. Increase the heat to bring the mixture to a gentle boil.
  5. Once boiling, reduce the heat to low and cover the pot partially with a lid. Let the broth simmer gently, allowing the flavors to meld together. The chicken should become tender and the broth should develop a rich, savory aroma.
  6. After the chicken is cooked through and the broth has a deep flavor, remove the bay leaf. Taste the broth and season with fine sea salt and black pepper to your liking, stirring well to ensure even distribution.
  7. Finish the broth by drizzling a small thread of olive oil over the top before serving. This adds a final touch of richness and enhances the overall flavor profile. Serve the broth hot, ideally with fresh bread or rice for a complete meal.
