Baharat Kebab Mix

Baharat Kebab Mix is a beloved staple among Turkish households, particularly cherished for its ability to elevate everyday meals into aromatic feasts. This spice blend, a jar of culinary magic, is often prepared ahead and kept on hand, ready to season kebabs and other grilled delights. Its roots wind through the rich culinary history of Turkey, where it has been a go-to for infusing meats with bold and vibrant flavors.

When used, Baharat Kebab Mix transforms dishes with its earthy cumin and sweet paprika, complemented by the subtle heat of pul biber and the herbal notes of oregano. This combination delivers a complex, savory profile that enhances the natural flavors of the meats it seasons. A sprinkle of this mix is all it takes to transport your taste buds to the bustling streets of Istanbul, where kebabs sizzle on open grills, filling the air with their irresistible aroma.

Ingredients

  • 2 tbspcumin
  • 2 tbsppaprika
  • 1 tbsppul biber
  • 1 tspblack pepper
  • 1 tbspfine sea salt
  • 1 tsporegano

Method

  1. Place a dry, heavy-bottomed skillet over medium heat. Add 2 tablespoons of cumin, 2 tablespoons of paprika, 1 tablespoon of pul biber, 1 teaspoon of black pepper, 1 tablespoon of fine sea salt, and 1 teaspoon of oregano to the skillet. Stir continuously with a wooden spoon to ensure even toasting. You'll know the spices are ready when they release a warm, aromatic fragrance and the cumin seeds take on a slightly darker hue.
  2. Remove the skillet from the heat and transfer the toasted spices to a large plate or a shallow bowl. Spread them out in a thin layer to allow them to cool completely. This step is crucial to prevent the spices from clumping together when ground.
  3. Once the spices are completely cool, transfer them to a spice grinder or a mortar and pestle. Grind the mixture until you achieve a fine, even consistency. If using a mortar and pestle, take your time to ensure all spices are evenly combined.
  4. Transfer the ground spice mix to an airtight jar or container. Make sure the lid is tightly sealed to preserve the aroma and flavor.
  5. Store the Baharat Kebab Mix in a cool, dark place, such as a pantry or cupboard, away from direct sunlight. For the best aroma and flavor, use the mix within a few months.
