The dried bouquet garni is a stalwart companion to French culinary classics, its origins deeply rooted in the tradition of long-simmered dishes. This humble bundle of bay leaves, thyme, and parsley stems is often tucked into simmering pots of pot-au-feu, blanquette de veau, and hearty bean soups. It brings a whisper of the countryside into kitchens, transforming simple ingredients into comforting meals that have graced tables for generations.

Method

  1. Lay out four small squares of cheesecloth on a clean surface. If you don't have cheesecloth, gather the herbs into neat bundles by hand, ensuring the bay leaves, thyme, and parsley stems are evenly distributed in each bundle.
  2. Place 1 dried bay leaf, 1 tsp dried thyme, and 1 tbsp dried parsley stems in the center of each cheesecloth square or bundle. This combination will provide a balanced flavor profile essential for classic French dishes.
  3. Carefully gather the corners of the cheesecloth squares or the ends of the herb bundles together. Make sure the herbs are snugly enclosed to prevent them from dispersing during cooking.
  4. Using kitchen twine, tie each bundle tightly around the top, ensuring the stems are secure. This will keep the herbs intact during a long simmer, allowing their flavors to infuse the dish without leaving stray leaves.
  5. When preparing a dish like stocks, pot-au-feu, or cassoulet, drop one bundle into the pot at the start of cooking. Allow it to simmer gently, releasing its aroma and flavor into the liquid. The bouquet garni is ready to be removed when the dish is finished cooking and the aroma of the herbs has fully permeated the broth.
  6. Store any extra bundles in a dry, airtight jar to maintain their potency. If you notice the aroma fading after one long braise, replace the bundles to ensure your dishes continue to benefit from their full flavor.
