Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Place a dry, heavy-bottomed skillet over medium heat. Add 2 tablespoons of ground cumin, 2 tablespoons of paprika, 1 tablespoon of ground coriander, and 1 teaspoon of black pepper to the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting. You'll know they're ready when the aroma becomes robust and the color deepens slightly, which should take about 3 to 4 minutes.
  2. Remove the skillet from the heat and transfer the toasted spices to a large plate or a shallow bowl to cool completely. This step is crucial to prevent the spices from continuing to cook and potentially burning, which would impart a bitter taste.
  3. Once the spices have cooled, combine them with 1 tablespoon of fine sea salt in a spice grinder or mortar and pestle. Grind the mixture until it reaches a uniform texture, ensuring that the flavors are evenly distributed throughout the blend.
  4. Transfer the Chinese House Rub to an airtight container, such as a glass jar with a tight-fitting lid. Store it in a cool, dark place, like a pantry or cupboard, to protect the spices from light and moisture, which can degrade their potency.
  5. For optimal flavor, use the Chinese House Rub within a few months. This blend will enhance the aroma and taste of various dishes, making it a versatile addition to your Chinese cooking repertoire.
