Doenjang Spice Blend

Doenjang spice blend finds its roots as a savory foundation in Korean culinary traditions, particularly enhancing stews and marinades with its robust character. This blend is not tied to any specific occasion but is a staple throughout the year, offering a comforting depth to everyday dishes.

The rich umami of doenjang melds seamlessly with the gentle heat of gochugaru, while sesame seeds lend a nutty undertone. Garlic powder infuses a subtle pungency, balanced by the mineral touch of fine sea salt. This blend should taste bold and earthy, yet balanced, adding a warm, savory complexity to any dish it meets.

Ingredients

  • 3 tbspdoenjang
  • 1 tbspgochugaru
  • 1 tbspsesame seeds
  • 1 tspgarlic powder
  • 1 tbspfine sea salt

Method

  1. Begin by placing a small, dry skillet over medium heat. Add 1 tbsp sesame seeds to the skillet and toast them, stirring frequently. You'll know they are ready when they turn a light golden brown and release a nutty aroma.
  2. Remove the toasted sesame seeds from the skillet and let them cool completely on a plate. This cooling step is crucial to prevent the seeds from releasing moisture when combined with other ingredients.
  3. In a small mixing bowl, combine 3 tbsp doenjang, 1 tbsp gochugaru, 1 tsp garlic powder, and 1 tbsp fine sea salt. Stir these ingredients together until they are evenly distributed.
  4. Once the sesame seeds are completely cool, add them to the mixing bowl with the other ingredients. Mix everything thoroughly to ensure the sesame seeds are evenly coated with the spice blend.
  5. Transfer the completed spice blend into an airtight container. Ensure the lid is tightly sealed to keep out moisture and light, which can degrade the flavors over time.
  6. Store the container in a cool, dark place, such as a pantry or cupboard. For the best aroma and flavor, use the spice blend within a few months.
