Kimchi Seasoning Mix

Serves 4 to 6 vegan

Kimchi Seasoning Mix

Kimchi Seasoning Mix is a staple in Korean homes, crafted with the same care and intuition as on kimchi-making days. This home version reflects the tradition of preparing kimchi seasoning by feel rather than precise measurement, with each ingredient added until the mixture feels just right. It's a recipe passed down and written as one would tell a family story, preserving the essence of sharing and tradition.

The mix should deliver a punch of heat from the gochugaru, balanced by the aromatic warmth of garlic and ginger powder. A subtle sweetness from sugar and a precise salinity from fine sea salt round out the flavors. This seasoning is designed to infuse your kimchi with a depth that speaks to its Korean roots, inviting you to savor its bold and complex character.

Ingredients

  • 3 tbspgochugaru
  • 1 tbspgarlic powder
  • 1 tbspginger powder
  • 1 tspsugar
  • 1 tspfine sea salt

Method

  1. Place a dry skillet on the stove over medium heat. Add 3 tablespoons of gochugaru to the skillet, ensuring it is spread out in an even layer. Toast the gochugaru for about 2 to 3 minutes, stirring frequently with a wooden spoon, until it becomes fragrant and slightly darker in color. This process enhances the flavor by releasing the natural oils in the chili flakes.
  2. Remove the skillet from the heat and transfer the toasted gochugaru to a large mixing bowl to cool completely. Allowing the gochugaru to cool prevents it from cooking the other ingredients when mixed, which could alter the intended flavor profile.
  3. Once the gochugaru is cool, add 1 tablespoon of garlic powder and 1 tablespoon of ginger powder to the bowl. Stir these ingredients together thoroughly using a spoon or spatula, ensuring an even distribution of the spices. This step builds the foundational flavors of the seasoning mix, combining the heat of the chili with the aromatic notes of garlic and ginger.
  4. Next, incorporate 1 teaspoon of sugar and 1 teaspoon of fine sea salt into the mixture. Stir well to combine, making sure that the sugar and salt are evenly dispersed throughout the mix. The sugar adds a slight sweetness that balances the heat, while the salt enhances all the flavors.
  5. Once all the ingredients are mixed, transfer the Kimchi Seasoning Mix into an airtight container. Store it in a cool, dark place, such as a pantry or cupboard, to preserve its freshness and potency. Proper storage ensures that the seasoning mix retains its vibrant flavor for future use.
