Ingredients

  • 2 tbspground cumin
  • 2 tbsppaprika
  • 1 tbspground coriander
  • 1 tspblack pepper
  • 1 tbspfine sea salt

Method

  1. Place a small, dry skillet over medium heat. Add 2 tablespoons of ground cumin, 2 tablespoons of paprika, and 1 tablespoon of ground coriander to the skillet. Stir continuously with a wooden spoon to prevent burning, until the spices release a warm, aromatic fragrance and the color deepens slightly, about 3 to 5 minutes. The spices should smell rich and inviting, signaling they are toasted.
  2. Remove the skillet from heat and immediately transfer the toasted spices to a large plate or a shallow bowl to cool completely. This prevents the residual heat from the skillet from over-toasting the spices, which could lead to bitterness.
  3. Once the spices have cooled to room temperature, combine them with 1 teaspoon of black pepper and 1 tablespoon of fine sea salt in a small mixing bowl. Use a whisk or a spoon to mix thoroughly, ensuring the spices are evenly distributed throughout the blend. The mixture should appear uniform in color and texture.
  4. Transfer the Korean House Rub to an airtight container, such as a glass jar with a tight-fitting lid. Store the container in a cool, dark place, like a pantry or cupboard, to protect the spices from light and moisture, which can degrade their flavor over time.
  5. For optimal flavor, use the Korean House Rub within a few months. This ensures that the spices maintain their potency and aroma, enhancing your dishes with the intended depth and complexity.
