Originating from the town of Menemen in the Izmir Province, this spice blend is an essential staple in Turkish kitchens, lending its vibrant character to the ubiquitous menemen dish—scrambled eggs with tomatoes and peppers. Its jarred convenience makes it a quick reach for adding a burst of flavor to everyday meals.

This blend sings with the warmth of pul biber and paprika, grounded by the earthiness of cumin, and uplifted by the unexpected freshness of dried mint. The fine sea salt ties these elements together, creating a harmonious balance that enhances dishes without overpowering them. Sprinkle it over eggs, stir it into yogurt, or use it to season meats, giving a taste of Turkish comfort and warmth.

Ingredients

  • 2 tbsppul biber
  • 1 tbsppaprika
  • 1 tspcumin
  • 1 tspdried mint
  • 1 tbspfine sea salt

Method

  1. Begin by placing a small, dry skillet over medium heat. Add 2 tablespoons of pul biber, 1 tablespoon of paprika, 1 teaspoon of cumin, and 1 teaspoon of dried mint to the skillet. Stir the spices continuously with a wooden spoon to ensure even toasting. You will know they are ready when the aroma becomes rich and slightly nutty, and the spices take on a slightly darker hue.
  2. Once the spices are toasted, remove the skillet from the heat immediately to prevent burning. Transfer the spices to a large plate or a shallow bowl to cool completely. This cooling step is crucial to prevent any residual heat from continuing to cook the spices, which could alter their flavor.
  3. After the spices have cooled completely, combine them with 1 tablespoon of fine sea salt. If you have a spice grinder, you can grind the mixture for a finer texture, or simply mix thoroughly with a spoon if you prefer a coarser blend. Ensure the spices and salt are evenly distributed for a consistent flavor in each use.
  4. Transfer the Menemen Pepper Mix to an airtight container. A glass jar with a tight-fitting lid works well for preserving the freshness of the spices. Make sure the container is clean and dry before adding the spice mix.
  5. Store the jar in a cool, dark place, such as a pantry or cupboard, away from direct sunlight and heat. This will help maintain the potency and aroma of the spices.
