Sauerbraten-Gewürz hails from the Rhineland, a region known for its hearty and robust cuisine. Traditionally, this pickling spice mix is a crucial component for preparing Sauerbraten, a beloved German pot roast. The blend transforms a simple cut of beef into a fragrant dish that is often enjoyed during festive occasions or Sunday family dinners, where its comforting aroma fills the air and signals a meal to remember.

The spice mix offers a symphony of flavors, where the piney essence of juniper berries meets the warm, spicy notes of cloves and allspice. Each ingredient plays its part, creating a balance that is both aromatic and deeply satisfying. The inclusion of bay leaves and black peppercorns adds a subtle earthiness, while mustard seeds and sea salt round out the profile with a gentle heat and savory depth.

Ingredients

  • 2 tbspjuniper berries
  • 1 tbspwhole cloves
  • 1 tbspallspice berries
  • 2 tbspblack peppercorns
  • 6bay leaves — crumbled
  • 1 tbspmustard seeds
  • 1 tbspfine sea salt

Method

  1. Place a dry skillet over medium heat. Add 2 tablespoons of juniper berries, 1 tablespoon of whole cloves, 1 tablespoon of allspice berries, 2 tablespoons of black peppercorns, and 1 tablespoon of mustard seeds to the skillet. Stir occasionally to ensure even toasting. Heat until the spices release a warm, aromatic fragrance, which should take about 3 to 5 minutes. This step enhances the flavors by releasing the oils in the spices.
  2. Once the spices are fragrant, remove the skillet from the heat and allow the spices to cool completely. This cooling step is crucial to prevent the spices from becoming too soft and losing their texture when crushed.
  3. Transfer the cooled spices to a mortar and pestle or a spice grinder. Crush them coarsely, ensuring that the spices are broken up but not ground into a fine powder. This texture will allow the flavors to infuse more effectively into the marinade.
  4. Crumble 6 bay leaves into the crushed spice mixture. Add 1 tablespoon of fine sea salt and stir well to combine. The bay leaves and salt enhance the overall aroma and flavor profile, balancing the other spices.
  5. To use, measure out two tablespoons of the spice mixture for each liter of Sauerbraten marinade. This ensures the marinade is sufficiently infused with the traditional flavors of Rhineland Sauerbraten.
  6. Store the remaining spice mixture in an airtight container. Keep it away from light and heat to preserve its potency. The mixture can be stored for up to six months, ready for your next batch of Sauerbraten.
