Yangnyeom Sauce Mix

Yangnyeom Sauce Mix is a staple in Korean kitchens, especially cherished for its role in creating the beloved Korean fried chicken. This home version brings the essence of Korean street food into your kitchen, capturing the indulgent spirit of gatherings around a table laden with crispy, spicy, and sweet bites. Whether it's a casual dinner or a festive occasion, this sauce is the secret behind the irresistible allure of Korean fried chicken.

The sauce is a harmonious blend of heat from gochugaru, the fiery Korean chili flakes, balanced by the subtle sweetness of sugar and the warmth of ginger and garlic powder. With a generous pinch of fine sea salt, it delivers a robust flavor that clings to each crispy morsel, making every bite a delightful contrast of textures and tastes. Serve it liberally over freshly fried chicken for an authentic Korean experience.

Ingredients

  • 2 tbspgochugaru
  • 1 tbspgarlic powder
  • 1 tbspsugar
  • 1 tspginger
  • 1 tspfine sea salt

Method

  1. Place a dry skillet on the stove over medium heat. Add 2 tablespoons of gochugaru to the skillet. Stir the gochugaru continuously with a wooden spoon to prevent burning. Toast until the gochugaru releases a fragrant aroma and deepens slightly in color, which should take about 2 to 3 minutes. Remove from heat immediately to prevent over-toasting.
  2. Allow the toasted gochugaru to cool completely in the skillet. This cooling step is crucial to ensure that the heat does not affect the flavors of the other ingredients when mixed.
  3. Once cooled, transfer the gochugaru to a mixing bowl. Add 1 tablespoon of garlic powder, 1 tablespoon of sugar, 1 teaspoon of ginger, and 1 teaspoon of fine sea salt to the bowl. Use a spoon or whisk to mix everything thoroughly until the ingredients are evenly combined.
  4. Ensure there are no clumps by breaking them up with the back of the spoon. The mixture should be uniform in color and texture, with the sugar and salt evenly distributed throughout.
  5. Transfer the Yangnyeom Sauce Mix into an airtight container. Store it in a cool, dark place, such as a pantry, to maintain its flavor and potency. Use as needed for seasoning fried chicken or other dishes, always ensuring the container is sealed tightly after each use.
