Berenjena Frita

Badenjan Mqali, a staple of Moroccan mezze, showcases the humble eggplant transformed into a flavorful delight. Often served at gatherings or as part of a larger spread, this dish also holds its own as a satisfying main when accompanied by fresh bread and a simple salad. It's a dish that speaks to the versatility of Moroccan cuisine, where vegetables often take center stage.

The eggplant, once fried to a golden hue, becomes tender and rich, absorbing the earthy notes of cumin and the pungent aroma of garlic. A splash of lemon or vinegar adds a bright tang, lifting the dish and balancing its flavors. Finished with a sprinkle of parsley, each bite offers a harmonious blend of textures and tastes, warm and inviting with every mouthful.

Ingredients

  • 2 grandesberenjenas, en rodajas
  • 4dientes de ajo
  • 1 cucharaditacomino
  • 1 cucharaditasal
  • para freíraceite de oliva
  • 1 cucharadalimón o vinagre
  • perejil — picado

Method

  1. Comience cortando 2 berenjenas grandes en rodajas de aproximadamente 1/2 cm de grosor. Coloque las rodajas en una bandeja grande o bandeja para hornear y espolvoréelas uniformemente con 1 cucharadita de sal. Déjelas reposar durante 20 minutos para extraer el exceso de humedad y amargor. Luego, use un paño de cocina limpio o papel de cocina para secar las rodajas, eliminando la humedad y la sal.
  2. En una sartén grande, vierta suficiente aceite de oliva para cubrir generosamente el fondo de la sartén, aproximadamente 1/2 cm de profundidad. Caliente el aceite a fuego medio-alto hasta que brille. Agregue cuidadosamente las rodajas de berenjena en una sola capa, sin llenar demasiado la sartén, y fríalas hasta que se doren por ambos lados. Puede que necesite hacerlo en tandas, añadiendo más aceite según sea necesario.
  3. Una vez que las berenjenas estén fritas, use una espumadera para transferirlas a un plato forrado con papel de cocina para escurrir el exceso de aceite. Vierta el aceite restante de la sartén, dejando solo una fina capa para cocinar el ajo y las especias.
  4. Reduzca el fuego a medio y vuelva a colocar la sartén en la estufa. Agregue 4 dientes de ajo picados a la sartén, revolviendo constantemente para evitar que se quemen. Después de unos 30 segundos, cuando el ajo se vuelva fragante, espolvoree 1 cucharadita de comino y continúe revolviendo durante otro minuto.
  5. Agregue las rodajas de berenjena frita de nuevo a la sartén, junto con 1 cucharada de jugo de limón o vinagre. Mezcle todo suavemente durante unos 2 minutos, asegurándose de que la berenjena esté bien cubierta con la mezcla de ajo y comino.
  6. Transfiera la berenjena a un plato para servir y adorne con perejil recién picado. Este plato se puede disfrutar caliente o dejar enfriar a temperatura ambiente, lo que lo convierte en una adición versátil a un mezze o como plato principal con pan y ensalada.
