Baghrir

Baghrir, often referred to as the thousand-hole pancakes, hail from the kitchens of Morocco, where they are a beloved breakfast or afternoon tea staple. These airy, sponge-like pancakes are made from a yeasted semolina batter, creating a delicate texture that soaks up the flavors of their accompaniments. Traditionally, they are enjoyed during Ramadan as well as on leisurely weekends, offering a gentle start to the day.

The true delight of baghrir lies in their texture and taste. Cooked on one side only, they form countless tiny craters that eagerly drink up melted butter and honey. Each bite is a harmonious blend of sweet and savory, with the honey adding a sticky richness and the butter a creamy depth, making them irresistible when served warm and fresh.

Ingredients

  • 250 gramossémola fina
  • 75 gramosharina
  • 1 cucharaditalevadura
  • 1 cucharaditapolvo de hornear
  • 1 cucharaditaazúcar
  • 1/2 cucharaditasal
  • 500 mililitrosagua tibia

Method

  1. En una licuadora, combine 250 gramos de sémola fina, 75 gramos de harina, 1 cucharadita de levadura, 1 cucharadita de polvo de hornear, 1 cucharadita de azúcar y 1/2 cucharadita de sal. Agregue 500 mililitros de agua tibia gradualmente mientras licúa a baja velocidad. Aumente la velocidad a alta y mezcle hasta obtener una masa suave y fina. Esto debería tomar alrededor de 1-2 minutos. La masa debe estar libre de grumos y tener una consistencia similar a la crema espesa.
  2. Vierta la masa en un tazón grande y cúbrala con un paño de cocina limpio. Déjela reposar durante 30 minutos a temperatura ambiente. Durante este tiempo, la levadura se activará y verá burbujas formándose en la superficie, indicando que la masa está lista para cocinar.
  3. Caliente una sartén antiadherente mediana a fuego medio. No agregue aceite ni mantequilla a la sartén. Una vez caliente, vierta un cucharón de masa en el centro de la sartén, permitiendo que se extienda naturalmente en un círculo. La masa debe tener un grosor de aproximadamente 3 mm.
  4. Cocine el baghrir solo por un lado. A medida que se cocina, notará que se forman agujeros en la superficie. Continúe cocinando hasta que toda la superficie esté cubierta de agujeros y la masa parezca seca, sin puntos brillantes o húmedos. Esto indica que el baghrir está completamente cocido.
  5. Retire cuidadosamente el baghrir de la sartén usando una espátula. No lo voltee. El lado cocido debe estar ligeramente dorado, mientras que la parte superior permanece pálida con agujeros visibles.
  6. Sirva el baghrir caliente, rociado con mantequilla derretida y miel. La mantequilla y la miel se filtrarán en los agujeros, realzando la textura y el sabor de estos panqueques únicos. Disfrútelos inmediatamente para obtener el mejor sabor y textura.
