Method

  1. Begin by preparing the artichokes: trim the stems and remove the tough outer leaves until you reach the tender, pale green ones. Cut off the top third of each artichoke and use a spoon to scoop out the fuzzy choke inside. As you work, rub the cut surfaces with a halved lemon to prevent browning.
  2. Peel and dice the potato into small cubes, roughly 1 cm in size. This will help them cook evenly and absorb the flavors of the dish. Mince the garlic cloves finely to ensure they distribute well throughout the dish.
  3. In a large pot, heat 80 ml of extra virgin olive oil over medium heat. Add the minced garlic and sauté gently until it becomes fragrant and lightly golden, being careful not to let it burn.
  4. Add the prepared artichokes and potato cubes to the pot, stirring to coat them evenly with the garlic-infused olive oil. Season with fine sea salt to taste, which will help draw out the natural flavors of the vegetables.
  5. Pour in enough water to just cover the artichokes and potatoes. Increase the heat to bring the mixture to a gentle simmer. Cover the pot and let it cook until the artichokes are tender and the potatoes are soft, which you can tell when a knife slides easily through the thickest part of the artichoke base.
  6. Once the vegetables are cooked, remove the pot from the heat. Squeeze the juice of the remaining lemon over the dish, ensuring it is evenly distributed to add brightness and acidity.
  7. Finish by sprinkling freshly chopped dill over the artichokes and potatoes. Serve immediately, allowing the fresh herbs and lemon to complement the warm, tender vegetables.
