Brasileiro Grilled Skewers

Brasileiro Grilled Skewers capture the essence of Brazilian home cooking, where the art of seasoning is an intuitive dance. This beloved dish finds its place at family tables, particularly during weekend gatherings, when the grill becomes the heart of the celebration. The skewers, simple yet flavorful, reflect the Brazilian knack for transforming everyday ingredients into something special.

As you bite into the skewers, expect the succulent lamb cubes to deliver a robust, meaty flavor, complemented by the subtle warmth of cumin. The onion adds a sweet, charred edge, while the generous use of olive oil ensures each morsel is juicy and satisfying. Salt and pepper are your guides, allowing each cook's touch to shine through.

Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Start by cutting the onion into large chunks, about the same size as the lamb cubes. This ensures even cooking and that the onion and lamb will grill at the same rate, allowing flavors to meld together on the skewer.
  2. In a large bowl, combine the 600 g of lamb cubes with 2 tbsp of olive oil and 1 tsp of cumin. Toss the mixture well to coat the lamb evenly with the oil and cumin, which will help enhance the meat's natural flavors and create a fragrant aroma as it grills.
  3. Season the lamb and onion chunks with fine sea salt and black pepper to taste. Use your hands to mix everything thoroughly, ensuring that the seasoning is evenly distributed across all pieces. This step is crucial for achieving a balanced flavor profile in each bite.
  4. Thread the lamb cubes and onion chunks alternately onto skewers, pressing them together gently. This close arrangement helps the flavors to infuse into each other during grilling, creating a harmonious taste.
  5. Preheat a grill or grill pan over medium-high heat. Once hot, place the skewers on the grill, turning them occasionally. Look for a deep golden-brown color on the lamb and slight char marks on the onions, indicating that the skewers are cooked through and have developed a rich, smoky flavor.
  6. Remove the skewers from the grill and let them rest for a minute to allow the juices to redistribute within the meat. This step ensures that the lamb remains juicy and tender when served.
  7. Finish by adding a final sprinkle of fine sea salt to taste, enhancing the flavors just before serving. Serve the skewers immediately, encouraging everyone at the table to share and enjoy this traditional Brazilian dish together.
