Serves 4 to 6 Appetizer vegan, Appetizers

Buticha Chickpea Dip Plate

Buticha Chickpea Dip Plate is a staple in the Ethiopian fasting tradition, a time when plant-based dishes take center stage. This dish, often enjoyed during periods of religious observance, showcases the resourcefulness of Ethiopian home cooking. Its simplicity and comforting aroma are a hallmark of everyday fasting tables, inviting everyone to gather and partake in its nourishing embrace.

The dip is a vibrant blend of creamy chickpeas, zesty lemon, and a hint of garlic, all brought together by the richness of olive oil. It offers a luscious texture that pairs perfectly with the soft, tangy injera. The flavors are direct and generous, reflecting the unpretentious hospitality of family meals.

Ingredients

  • 2 cupscooked chickpeas — mashed
  • 2 tbsplemon juice
  • 2 tbspolive oil
  • 1garlic clove — minced
  • as neededinjera — for serving

Method

  1. Start by placing 2 cups of cooked chickpeas into a medium-sized mixing bowl. Use a fork or potato masher to gently mash the chickpeas until they are mostly smooth but retain some texture. This texture is key to the Buticha, giving it a rustic feel that holds the flavors well.
  2. Finely mince 1 garlic clove and add it to the mashed chickpeas. The fresh garlic will infuse the dip with a sharp, aromatic flavor that balances the creaminess of the chickpeas.
  3. Pour 2 tablespoons of lemon juice over the chickpeas and garlic. The acidity from the lemon juice will brighten the flavors and help to break down the chickpeas further, enhancing the dip's smoothness.
  4. Drizzle 2 tablespoons of olive oil into the mixture. Stir well to combine, ensuring the olive oil is fully incorporated, which will add a rich, silky texture to the dip.
  5. Taste the mixture and adjust seasoning if needed, adding a pinch of salt to enhance the flavors. The dip should have a balanced taste with a hint of acidity and a smooth, creamy consistency.
  6. To serve, spread the Buticha Chickpea Dip onto a plate. Arrange pieces of injera around the dip for scooping. The injera will complement the dip with its soft, spongy texture and slight tanginess.
  7. Serve the Buticha Chickpea Dip Plate warm or at room temperature. The aroma should be inviting, with the garlic and lemon notes coming through, making it a perfect addition to a fasting table.
