Ingredients

  • 600 glamb cubes
  • 1onion
  • 2 tbspolive oil
  • 1 tspcumin
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing the lamb cubes. Ensure they are uniformly cut into approximately 2-inch pieces to promote even cooking. Peel and finely chop the onion, setting it aside for later use. This preparation allows for a smooth cooking process once the heat is on.
  2. In a large mixing bowl, combine the lamb cubes with 2 tablespoons of olive oil. Add 1 teaspoon of cumin, and season generously with fine sea salt and black pepper to taste. Mix well, ensuring each piece of lamb is evenly coated with the oil and spices, which will enhance the flavor and help the meat cook evenly.
  3. Thread the seasoned lamb cubes onto skewers, leaving a small gap between each piece to allow heat to circulate. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning during grilling.
  4. Preheat a grill pan over medium-high heat. Once hot, place the skewers on the grill pan. Cook the lamb skewers for about 4-5 minutes on each side, turning occasionally to ensure they brown evenly. You're looking for a deep, golden-brown crust on the outside, while the inside remains juicy and tender.
  5. As the skewers cook, the aroma of cumin and grilled lamb will fill the air, indicating the flavors are developing well. Use a pair of tongs to gently press the lamb; it should feel firm yet springy, indicating it is cooked through.
  6. Once the lamb skewers are cooked to your liking, remove them from the grill and let them rest for a couple of minutes. This resting period allows the juices to redistribute within the meat, ensuring each bite is succulent.
