Kefta Bites

Kefta Bites are a beloved prelude to the main course in Moroccan meals, often enjoyed as a flavorful appetizer before the tagine makes its entrance. These small, savory morsels are crafted from a mix of ground lamb or beef, grated onion, and a fragrant blend of herbs and spices, including parsley, cilantro, and ras el hanout. Typically grilled or pan-fried, their enticing aroma sets the stage for the culinary journey ahead.

Ingredients

  • 500 g (1.1 lb)ground lamb or beef
  • 1onion, grated
  • 1 handfulparsley and cilantro
  • 1 tspras el hanout
  • 1 tspcumin
  • 1 tsppaprika
  • 1 tspsalt

Method

  1. In a large mixing bowl, combine 500 g (1.1 lb) ground lamb or beef with 1 grated onion, a handful of chopped parsley and cilantro, 1 teaspoon ras el hanout, 1 teaspoon cumin, 1 teaspoon paprika, and 1 teaspoon salt. Use your hands to mix the ingredients thoroughly, kneading the mixture until it becomes sticky and well-combined. This ensures that the flavors are evenly distributed throughout the meat. Cover the bowl with a cloth and let it rest for 15 minutes to allow the spices to infuse the meat.
  2. After resting, take small portions of the meat mixture and shape them into oval patties, about the size of a walnut. Ensure that each piece is compact and smooth, which helps them hold together during cooking.
  3. Preheat a grill or a large frying pan over medium-high heat. If using a pan, add a small amount of oil to prevent sticking. Once hot, place the kefta ovals onto the grill or pan, ensuring they are not overcrowded, which allows even cooking.
  4. Cook the kefta for about 3-4 minutes on each side, or until they are browned and cooked through. You will know they are done when the outside is nicely charred and the inside is firm to the touch but still juicy. Avoid overcooking to maintain their tenderness.
  5. Serve the kefta bites immediately with a side of cumin, lemon, and onion salad. The salad's acidity and freshness complement the rich and spiced flavors of the kefta. Enjoy them with warm bread, if desired, as a delightful appetizer before the main tagine.
