Maakouda

Maakouda, a beloved street food from northern Morocco, transforms humble potatoes into delightful fritters. Often found sizzling at roadside stalls, these cumin-scented bites are a staple of quick lunches and casual snacks. Whether tucked into sandwiches or enjoyed straight from a paper cone, they offer a taste of Moroccan street culture, where simplicity meets flavor.

Golden and crisp on the outside, Maakouda reveal a soft, spiced interior flecked with parsley and hints of garlic. The cumin and turmeric lend warmth, complementing the sweetness of the onion and creating a complex, savory bite. Each fritter invites a satisfying crunch, a nod to the comfort found in this cherished Moroccan treat.

Ingredients

  • 800 g (1.75 lb)potatoes
  • 1onion, minced
  • 2garlic cloves
  • 1 tspcumin
  • 1 tspturmeric
  • 2 tbspflour
  • 1 handfulparsley, chopped
  • pinchsalt
  • for fryingoil

Method

  1. Peel and cut 800 g (1.75 lb) of potatoes into even chunks to ensure they cook uniformly. Place them in a large pot and cover with cold water. Add a pinch of salt to the water to season the potatoes as they cook. Bring the water to a boil over high heat, then reduce to a simmer. Cook until the potatoes are tender and easily pierced with a fork, about 15-20 minutes.
  2. While the potatoes are boiling, mince 1 onion and 2 garlic cloves finely. This will ensure they blend smoothly into the potato mixture, providing even flavor throughout the maakouda.
  3. Once the potatoes are tender, drain them thoroughly and return them to the pot. Mash the potatoes until smooth, ensuring there are no lumps, as this will affect the texture of the patties.
  4. Add the minced onion and garlic to the mashed potatoes. Sprinkle in 1 tsp cumin and 1 tsp turmeric, which will give the maakouda their characteristic flavor and color. Add 2 tbsp flour and a handful of chopped parsley. Mix everything together until well combined, ensuring the spices and parsley are evenly distributed.
  5. Take a small portion of the potato mixture and shape it into a patty about the size of your palm and 1 cm thick. Repeat with the remaining mixture, ensuring all patties are of uniform size for even cooking.
  6. Heat enough oil in a large frying pan over medium-high heat to cover the base by about 1 cm. Test the oil by dropping in a small piece of the potato mixture; if it sizzles immediately, the oil is ready.
  7. Carefully place the patties into the hot oil, being careful not to overcrowd the pan. Fry the patties until they are deep golden brown on one side, about 3-4 minutes, then flip and cook the other side. The patties should be crisp on the outside and hold together well.
  8. Once fried, remove the patties from the oil and drain on paper towels to remove excess oil. Serve the maakouda hot, enjoying their crispy exterior and cumin-scented interior.
