Pakistani Stuffed Vegetables

Pakistani Stuffed Vegetables are a beloved staple across urban homes from Karachi to Islamabad. This dish embodies the everyday culinary practice of Pakistani families, where recipes are passed down and adapted through generations. The vegetables, often seasonal and locally sourced, are filled with a fragrant mixture of rice, onions, and herbs, creating a comforting meal that's meant to be savored and shared at the family table.

Each bite of these stuffed vegetables offers a warm embrace of flavors — the subtle sweetness of onions mingling with the robust earthiness of black pepper and fine sea salt. The olive oil brings a luscious richness, while the fresh herbs offer a refreshing lift. Whether nestled in peppers or tomatoes, this dish is an invitation to gather and enjoy the simple pleasures of home cooking.

Ingredients

  • 4peppers or tomatoes
  • 150 grice
  • 1onion
  • 80 mlolive oil
  • herbs — chopped
  • to tastefine sea salt and black pepper

Method

  1. Begin by preparing your vegetables. If using peppers, slice off the tops and remove the seeds and membranes. If using tomatoes, cut a small circle around the stem and scoop out the insides with a spoon, being careful not to pierce the skin. Set these prepared vegetables aside.
  2. Next, rinse 150 g of rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky. Drain the rice well and set it aside for later use.
  3. Finely chop 1 onion and set it aside. In a large pan, heat 80 ml of olive oil over medium heat. Add the chopped onion to the pan and sauté until it becomes translucent and starts to turn golden brown, which should take about 5-7 minutes. This step builds the foundational flavor for the stuffing.
  4. Add the rinsed rice to the pan with the onions. Stir well to coat the rice with the oil and onion mixture. Add your choice of herbs, such as cilantro or mint, and season with fine sea salt and black pepper to taste. Continue to cook for another 2-3 minutes, allowing the rice to absorb the flavors.
  5. Carefully stuff each prepared vegetable with the rice mixture, packing it gently but firmly. Leave a little space at the top to allow the rice to expand as it cooks. Place the stuffed vegetables upright in a baking dish.
  6. Preheat your oven to 180°C (350°F). Drizzle a little more olive oil over the stuffed vegetables to keep them moist during baking. Cover the dish with foil and bake in the preheated oven. The vegetables are done when they are tender and the rice is fully cooked, which you can check by piercing with a fork and ensuring the rice is soft.
  7. Once baked, remove the foil and let the vegetables cool slightly. Finish by sprinkling a bit more fine sea salt over the top if needed. Serve the stuffed vegetables warm, allowing everyone at the table to enjoy the shared flavors of this Pakistani home-cooked dish.
