Stuffed Grape Leaves (Dolmas)

Stuffed Grape Leaves, or Dolmas, are a staple across Mediterranean tables, from Aegean coastlines to Levantine homes. This home-cooked version is crafted for everyday enjoyment, capturing the essence of both sea and garden. Olive oil and lemon are central to its preparation, bringing a touch of the region's easy generosity into your kitchen.

Each bite of these tender grape leaves reveals a flavorful blend of rice, sweet onion, and the fresh notes of dill and mint. Pine nuts add a delicate crunch, while the olive oil and lemon juice provide richness and tang. Ingredients

  • 40grape leaves
  • 200 grice
  • 1onion
  • 60 mlolive oil
  • 60 mllemon juice
  • handfuldill and mint
  • pine nuts — optional
  • to tastefine sea salt

Method

  1. Rinse the grape leaves under cold water to remove excess brine. If using fresh leaves, blanch them in boiling water for about 2 minutes until they become pliable. Drain and set aside on a clean kitchen towel to dry.
  2. Finely chop the onion and set it aside. In a medium saucepan, heat 30 ml of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent and fragrant, about 5 minutes. Add the rice and stir to coat it well with the oil and onion mixture.
  3. Pour in 200 ml of water and a pinch of fine sea salt. Stir gently and bring the mixture to a simmer. Cover the saucepan with a lid and cook until the rice is partially cooked and has absorbed most of the water, about 10 minutes. The rice should be tender but still have a slight bite.
  4. Remove the saucepan from heat and let it cool slightly. Finely chop a handful of dill and mint, then add them to the rice mixture along with a small handful of pine nuts. Stir to combine, ensuring the herbs and nuts are evenly distributed throughout the rice.
  5. To assemble the dolmas, lay a grape leaf flat on a clean surface, vein side up. Place a heaping teaspoon of the rice mixture near the stem end of the leaf. Fold the sides over the filling, then roll it up tightly from the stem end to the tip, creating a small, compact parcel.
  6. In a large, shallow pot, arrange the stuffed grape leaves seam side down in a single layer. Drizzle with the remaining 30 ml of olive oil and 60 ml of lemon juice. Add enough water to cover the dolmas halfway, then place a heatproof plate on top to keep them submerged during cooking.
  7. Cover the pot with a lid and bring to a gentle simmer over low heat. Cook until the grape leaves are tender and the rice is fully cooked, about 40 minutes. The dolmas should be firm but not mushy, and the leaves should have a rich olive green color.
  8. Carefully remove the dolmas from the pot and arrange them on a serving platter. Drizzle with a little more olive oil and a squeeze of fresh lemon juice. Serve warm or at room temperature, allowing the flavors to meld and the dish to shine with its Mediterranean essence.
