Yangnyeom Gejang

Serves 4 to 6 seafood

Yangnyeom Gejang

Yangnyeom Gejang is a beloved staple at spicy crab houses, where the art of seasoning is guided by intuition rather than strict measurement. This home version captures the essence of those bustling eateries, bringing the communal joy of sharing to your dining table. Korean family cooks have long perfected this dish, relying on a practiced hand to balance the savory and spicy notes that define it.

Expect a symphony of flavors as the vibrant gochujang melds with the smoky heat of gochugaru, while garlic and soy sauce enhance the natural sweetness of the crab. The generous use of fat ensures each bite is succulent, inviting you to savor every morsel. Serve it family-style, inviting everyone to dive into this spicy, fragrant feast.

Ingredients

  • 4crabs
  • 3 tbspgochujang
  • 1 tbspgochugaru
  • 4garlic cloves
  • 1 tbspsoy sauce
  • to tastefine sea salt

Method

  1. Begin by cleaning the 4 crabs thoroughly under cold running water to remove any sand or debris. Use a brush to scrub the shells gently. Once cleaned, use a sharp knife to cut each crab into manageable pieces, typically into halves or quarters, depending on the size.
  2. In a large mixing bowl, combine 3 tablespoons of gochujang, 1 tablespoon of gochugaru, 4 minced garlic cloves, and 1 tablespoon of soy sauce. Mix well until you achieve a smooth, consistent paste. This will be the spicy marinade for the crabs.
  3. Add the crab pieces to the bowl with the marinade. Use your hands or a spoon to coat each piece thoroughly with the spicy paste, ensuring that all surfaces are covered. Let the crabs marinate for at least 30 minutes to allow the flavors to penetrate.
  4. Heat a large, deep skillet or wok over medium-high heat. Add a generous amount of oil to coat the bottom of the pan. Once the oil is shimmering, carefully add the marinated crab pieces to the pan.
  5. Cook the crabs, stirring occasionally, for about 10 to 15 minutes. The crabs should turn a vibrant red color, and the sauce will thicken and cling to the shells. The aroma should be spicy and savory, indicating the crabs are cooked through.
  6. Taste the dish and adjust the seasoning with fine sea salt as needed. The sauce should be well-balanced, with a hint of sweetness from the gochujang and a spicy kick from the gochugaru.
  7. Transfer the cooked Yangnyeom Gejang to a serving platter. Serve immediately while hot, ensuring each piece is generously coated with the spicy sauce. This dish is best enjoyed with steamed rice and shared at the table.
