Agua Fresca de Sandía should burst with the juicy sweetness of watermelon, complemented by a zesty hint of lime. The sugar balances the tang, creating a harmonious symphony of flavors. Served over plenty of ice, it transforms into a chilled oasis, perfectly capturing the essence of a refreshing Mexican summer.

Ingredients

  • 1.5 kg (3 lb)ripe watermelon — seeded and cubed
  • 4 cupscold water
  • 3 tbsplime juice
  • 80 g (1/3 cup)sugar — or to taste
  • for servingplenty of ice

Method

  1. Start by cutting the watermelon into manageable pieces. Remove the rind and any visible seeds. You should end up with about 1.5 kg (3 lb) of ripe watermelon flesh. This will ensure a smooth blending process and a vibrant color in your agua fresca.
  2. Place the watermelon chunks into a blender. Add 4 cups of cold water. Blend on high speed until the mixture is smooth and the color is bright and even, indicating that the watermelon has fully integrated with the water.
  3. Add 80 g (1/3 cup) of sugar to the blender. Blend again briefly to dissolve the sugar. Taste the mixture to ensure it is sweet enough for your preference, as watermelons can vary in sweetness.
  4. Pour in 3 tbsp of lime juice to the blender. Blend once more to incorporate the lime juice, which will sharpen the flavor and add a refreshing tang. Taste again and adjust the lime juice if necessary to balance the sweetness.
  5. If you prefer a smoother drink, strain the mixture through a fine-mesh sieve into a large pitcher to remove any remaining seeds or pulp. This step is optional if you enjoy a more rustic texture.
  6. Transfer the pitcher to the refrigerator and chill the agua fresca until it is very cold. This chilling step enhances the refreshing quality of the drink.
  7. To serve, fill glasses with plenty of ice and pour the chilled agua fresca over the ice. Place the pitcher on the table for easy refills, allowing everyone to enjoy the vibrant aroma and refreshing taste of this classic Mexican beverage.
