Almond Milk

Almond milk, known as rozata when made with milk, is a cherished drink in Moroccan weddings and during Ramadan, offering a moment of refreshment and celebration. This luxurious beverage speaks to the elegance and simplicity of Moroccan festivities, where the gentle sweetness and floral notes provide a soothing pause amidst the vibrant gatherings.

The drink should feel smooth and cool, with a delicate balance of nutty richness and fragrant orange blossom. Each sip is a velvety embrace, with the subtle sweetness of sugar rounding out the flavors. Whether served at a wedding or shared during the holy month, almond milk invites a sense of tranquility and indulgence.

Ingredients

  • 200 g (7 oz)blanched almonds
  • 800 mlcold water or milk
  • 4 tbspsugar
  • 1 tbsporange blossom water

Method

  1. Begin by placing 200 g (7 oz) of blanched almonds into a blender. Add 800 ml of cold water or milk, depending on your preference. Blend the mixture on high speed until the almonds are finely ground and the liquid turns a milky white color, indicating that the almonds have released their oils and flavor into the liquid.
  2. Once blended, decide on the texture of your almond milk. For a smooth consistency, pour the mixture through a fine-mesh sieve or a cheesecloth placed over a bowl, pressing down to extract as much liquid as possible. If you prefer a more rustic texture, you can skip this step and leave the almond bits in the drink for added body.
  3. Transfer the strained or unstrained almond milk back into the blender or a large mixing bowl. Add 4 tablespoons of sugar to the almond milk, stirring or blending until the sugar is completely dissolved. Taste the mixture to ensure it is sweetened to your liking, adjusting if necessary.
  4. Add 1 tablespoon of orange blossom water to the sweetened almond milk. This will impart a fragrant, floral aroma that is characteristic of Moroccan almond milk. Stir or blend briefly to evenly distribute the orange blossom water throughout the drink.
  5. Pour the almond milk into a serving jug or individual glasses. For the best experience, chill the almond milk in the refrigerator until it is very cold, as this enhances the refreshing quality of the drink. Serve the almond milk as a delightful accompaniment to a Moroccan meal or as a special treat during weddings and Ramadan.
