In the bustling cafés of Morocco, avocado juice finds its place as a refreshing escape from the afternoon heat. This creamy concoction is a staple, offering a lush and cooling break in the midst of a sun-drenched day. Unlike the vibrant and aromatic dishes that dominate Moroccan tables, this drink is a smooth, understated delight, often enjoyed as a leisurely indulgence.

The juice is a luscious blend of ripe avocados and cold milk, sweetened just enough to enhance its natural richness. A spoon might be your best companion as you savor its thick, velvety texture. Occasionally, the subtle crunch of a few almonds adds a delightful contrast, making each sip a gentle dance between creamy and nutty.

Ingredients

  • 2ripe avocados
  • 300 mlcold milk
  • 2 tbspsugar
  • almondsa few — optional

Method

  1. Begin by selecting 2 ripe avocados. Check for ripeness by gently pressing the skin; it should yield slightly without being mushy. Cut each avocado in half lengthwise, twist the halves to separate them, and remove the pits. Scoop the flesh out with a spoon and place it directly into a blender.
  2. Add 300 ml of cold milk to the blender. The milk should be fresh and chilled to ensure the juice is refreshing and smooth. This will also help in achieving the desired thick consistency.
  3. Measure 2 tablespoons of sugar and add it to the blender. The sugar will balance the creamy texture of the avocados with a touch of sweetness. If you prefer a sweeter juice, you can adjust the sugar to taste after blending.
  4. Add a few almonds to the blender. These will add a subtle nutty flavor and a slight texture contrast to the creamy juice. Ensure the almonds are unsalted and raw for the best flavor integration.
  5. Secure the lid on the blender and blend the mixture on high speed. Blend until the mixture is thick and smooth, with no visible chunks of avocado or almonds. This should result in a creamy, pale green liquid. Taste the juice and adjust the sugar if necessary, blending again briefly to incorporate any additional sugar.
  6. Once the desired sweetness and consistency are achieved, pour the avocado juice immediately into tall glasses. The juice should be thick enough to hold a spoon upright. Serve it chilled to enjoy the refreshing qualities of this Moroccan café-style drink.
