Nimbu Pani

Serves 4 to 6 vegan

Nimbu Pani

Nimbu Pani, a quintessential refreshment from North India, finds its place at the heart of sun-drenched summer afternoons. The recipe, an heirloom passed from kitchen to kitchen, reflects the intuitive cooking of family cooks who balance salt with a discerning hand and lavishly incorporate fat to create a drink that soothes and invigorates. This version captures the essence of home, where Nimbu Pani is more than just a thirst-quencher; it's a lifeline during the sweltering heat.

Every sip of Nimbu Pani should be a symphony of tangy lime, subtly sweetened with sugar, and animated by the earthy warmth of roasted cumin. The black salt adds a mineral depth, while a handful of mint leaves infuses the drink with a refreshing coolness. Served over ice, this drink is a vibrant expression of summer's bounty, offering a brief respite from the relentless sun.

Ingredients

  • 4limes
  • 800 mlcold water
  • 3 tbspsugar
  • 1 tsproasted cumin
  • 1/2 tspblack salt
  • as neededice
  • 1 handfulmint

Method

  1. Begin by preparing the limes. Roll each lime firmly on the countertop to loosen the juices inside. Cut the limes in half and use a citrus juicer to extract the juice from all 4 limes. Strain the juice through a fine-mesh sieve into a large pitcher to remove any seeds or pulp, ensuring a smooth drink.
  2. Pour 800 ml of cold water into the pitcher with the lime juice. This forms the base of your Nimbu Pani, providing a refreshing and hydrating drink.
  3. Add 3 tablespoons of sugar to the pitcher. Stir gently with a long spoon until the sugar is completely dissolved. The sugar should balance the tartness of the lime without overpowering it.
  4. Sprinkle 1 teaspoon of roasted cumin and 1/2 teaspoon of black salt into the mixture. Stir gently to combine. The roasted cumin adds a warm, earthy aroma, while the black salt provides a unique savory note that enhances the overall flavor.
  5. Add a handful of fresh mint leaves to the pitcher. Gently bruise the leaves with the back of the spoon to release their essential oils, which will infuse the drink with a refreshing minty aroma.
  6. Fill serving glasses with ice cubes as needed. Pour the Nimbu Pani over the ice, ensuring each glass receives an even distribution of mint leaves.
  7. Serve the Nimbu Pani immediately in traditional glassware. The drink should be cold, refreshing, and balanced in flavor, with the mint leaves floating on top and the aroma of roasted cumin subtly present.
