Vinho do Porto Tónico

Serves 4 to 6 Beverage vegetarian, Beverages

Vinho do Porto Tónico

Vinho do Porto Tónico hails from the charming cities of Porto and Vila Nova de Gaia, where it is embraced as a refreshing antidote to the sun-drenched afternoons. This is not the ceremonial version sipped in grand establishments but rather the one enjoyed at home, where olive oil flows generously and salt is pinched with intuition. Here, it finds its place at leisurely weekend gatherings, a chilled counterpart to the warmth of convivial conversation.

This refreshing cocktail combines crisp white port with tonic water, enhanced by fresh orange zest and mint, offering a citrusy freshness and subtle sweetness, ideal for a relaxed summer afternoon or a spontaneous evening gathering.

Ingredients

  • 200 mlwhite port wine — well chilled
  • 400 mltonic water
  • 1orange — cut into wide strips of peel
  • 4 sprigsfresh mint
  • ice cubesto fill the glasses

Method

  1. Begin by ensuring that your white port wine (200 ml) and tonic water (400 ml) are well chilled. This is essential for achieving the refreshing quality of Vinho do Porto Tónico. Place them in the refrigerator for at least a few hours before you plan to prepare the drink.
  2. While the liquids are chilling, prepare your orange. Use a sharp knife to slice the orange into thin rounds. These will not only add flavor but also serve as a visual garnish, enhancing the presentation of your drink.
  3. Once the liquids are chilled, take a large pitcher and add the 200 ml of white port wine. This will be the base of your drink, providing its characteristic sweetness and depth.
  4. Slowly pour the 400 ml of tonic water into the pitcher with the port wine. Pour gently to maintain the carbonation of the tonic water, which adds a delightful effervescence to the drink.
  5. Add the orange slices to the pitcher. Allow the mixture to rest for a few minutes. This resting period is crucial as it lets the citrus oils infuse into the drink, enhancing its aroma and flavor.
  6. Taste the mixture to ensure the balance of sweetness and citrus is to your liking. If necessary, adjust by adding more orange slices or a small amount of sugar, stirring until completely dissolved.
  7. Fill your serving glasses with ice cubes. The ice will keep the drink chilled and refreshing, which is essential for its enjoyment.
  8. Pour the Vinho do Porto Tónico over the ice-filled glasses. Garnish each glass with a sprig of fresh mint, gently pressing the leaves to release their aroma before placing them in the drink. Serve immediately, enjoying the blend of flavors while the drink is at its optimal chilled temperature.
