Arroz Zambito

Arroz Zambito, a cherished Peruvian dessert, finds its origins in the vibrant sweet rice stalls scattered throughout the country. It's a dish that effortlessly bridges the gap between street food and home cooking, making its way into family gatherings and casual meals alike. This version captures the essence of those stalls, embracing the tradition of generous fat and salt measured by instinct, offering a rich and satisfying conclusion to any meal.

The dish is a warm embrace of creamy rice infused with the deep, molasses-like sweetness of chancaca or dark sugar. Coconut adds a subtle tropical note, while a hint of clove and cinnamon brings a gentle warmth. Each spoonful is a harmonious blend of textures and flavors, creating a comforting experience that lingers pleasantly on the palate.

Ingredients

  • 200 grice
  • 400 mlmilk
  • 80 gchancaca or dark sugar
  • 40 gcoconut
  • 1 pinchclove and cinnamon
  • 1 pinchsalt

Method

  1. Rinse 200 g of rice under cold running water until the water runs clear. This removes excess starch, which helps achieve the desired texture for Arroz Zambito. Drain the rice well.
  2. In a medium-sized pot, combine the rinsed rice with 400 ml of milk. Add a pinch of clove and cinnamon for flavor. Place the pot over medium heat and bring the mixture to a gentle simmer, stirring occasionally to prevent the rice from sticking to the bottom.
  3. Once the milk begins to simmer, reduce the heat to low and continue cooking the rice slowly. Stir frequently until the rice is tender and has absorbed most of the milk. The mixture should be creamy, and the rice should be soft but not mushy.
  4. Add 80 g of chancaca or dark sugar to the pot, stirring until it dissolves completely. The sugar will give the rice a rich, caramel-like flavor and a deep brown color. Continue to cook on low heat, stirring occasionally, until the mixture thickens further.
  5. Stir in 40 g of coconut and a pinch of salt. The coconut adds a subtle sweetness and texture to the dish. Cook for a few more minutes until the coconut is well incorporated and the mixture reaches a thick, pudding-like consistency.
  6. Remove the pot from heat and let the Arroz Zambito cool slightly. The rice should hold its shape when spooned but still be creamy. Serve warm, allowing the flavors to meld together, which enhances the overall taste of this traditional Peruvian dessert.
