Ingredients

  • 250 gMedjool dates
  • 120 gwalnuts or almonds
  • 1 tbsptahini
  • 1 tspcinnamon
  • pinchorange zest

Method

  1. Begin by pitting 250 g of Medjool dates if they aren't already pitted. Place them in a food processor. Add 120 g of walnuts or almonds. Pulse the mixture until it forms a coarse, sticky paste. The consistency should be such that it holds together when pressed between your fingers.
  2. Transfer the date and nut mixture into a medium-sized mixing bowl. Add 1 tbsp of tahini and 1 tsp of cinnamon to the bowl. Use a spatula or your hands to thoroughly combine the ingredients, ensuring the tahini is evenly distributed throughout the mixture. This will add a creamy texture and a hint of spice to the bites.
  3. Grate a small amount of orange zest over the mixture, adding just a pinch. The zest should be finely grated to ensure it blends well and distributes its citrus aroma evenly. Mix again until the zest is fully incorporated, which will brighten the flavor of the bites.
  4. Line a baking sheet with parchment paper. Scoop small portions of the mixture, about the size of a walnut, and roll them into balls using your palms. Place each ball onto the prepared baking sheet, ensuring they are evenly spaced.
  5. Preheat your oven to 160°C (320°F). Once heated, place the baking sheet in the oven. Bake the bites gently for about 10 minutes, or until they are firm to the touch and slightly golden on the outside. The aroma of the dates and nuts should be fragrant, signaling they are ready.
