Moustalevria, a cherished autumn dessert, emerges from the Greek villages as grapevines yield their bounty. Traditionally, this dish graces the table after the grape harvest, when families gather to transform freshly pressed grape must into something more than wine. This version captures the essence of home cooking, where olive oil flows freely, salt is sprinkled with intuition, and lemon stands by as both seasoning and garnish.

This pudding-like treat offers a balance of sweet and earthy flavors, its texture smooth yet dense from the mingling of grape must and flour. A sprinkling of sesame seeds and walnuts adds a delightful crunch, while a dusting of cinnamon lends warmth and depth. Each spoonful is a nod to the season's harvest, a celebration of flavors both simple and profound.

Ingredients

  • 500 mlgrape must
  • 80 gflour

Method

  1. Begin by pouring 500 ml of grape must into a medium-sized saucepan. Place the saucepan over medium heat and bring the grape must to a gentle simmer. This step helps to concentrate the flavors and thicken the must slightly, which is essential for the texture of the Moustalevria.
  2. In a separate bowl, sift 80 g of flour to remove any lumps. Gradually whisk the sifted flour into the simmering grape must. Stir continuously with a wooden spoon to prevent any lumps from forming. The mixture should start to thicken and become smooth.
  3. Continue to cook the mixture over medium heat, stirring constantly. This ensures the flour is fully cooked and the mixture doesn't stick to the bottom of the pan. You'll know it's ready when the mixture becomes thick and glossy, similar to a pudding consistency.
  4. Once the desired consistency is reached, remove the saucepan from the heat. Allow the Moustalevria to cool slightly in the pan for a few minutes. This cooling period helps the mixture to set slightly before transferring.
  5. Pour the Moustalevria into a shallow serving dish or individual bowls. Smooth the top with the back of a spoon to create an even surface. Let it cool completely at room temperature, which will allow it to set fully.
  6. To finish, sprinkle sesame seeds and chopped walnuts generously over the top. Dust with a light layer of cinnamon to enhance the flavor. These toppings add a delightful crunch and aromatic finish to the dish.
  7. Serve the Moustalevria at room temperature. This allows the flavors to be fully appreciated and the texture to remain soft yet firm. Enjoy as a traditional Greek dessert, perfect for an autumn gathering.
