Sweet Seffa

Sweet Seffa is a traditional Moroccan dessert that takes the spotlight after a hearty meal, offering a sweet contrast to savory courses. It's a dish deeply rooted in Moroccan celebrations, where it graces the table as a symbol of abundance and hospitality. Typically presented as a towering mound, Seffa is enjoyed during festive occasions and family gatherings, making its appearance at the center of the table a much-anticipated moment.

Sweet Seffa combines tender couscous or vermicelli with butter, sugar, and cinnamon, enhanced by crunchy toasted almonds and sweet raisins, offering a harmonious blend of textures and warm Moroccan flavors as a delightful dessert.

Ingredients

  • 400 g (14 oz)couscous or vermicelli
  • 4 tbspbutter
  • 4 tbspsugar
  • 2 tspcinnamon
  • 80 g (3 oz)toasted almonds
  • 60 g (2 oz)raisins

Method

  1. Start by preparing the couscous or vermicelli. If using couscous, place 400 g (14 oz) of couscous in a large bowl and cover it with just enough boiling water to submerge. Let it sit for about 5 minutes until the grains absorb the water and become tender. If using vermicelli, break it into smaller pieces and cook it in boiling water until al dente, then drain well.
  2. Once the couscous or vermicelli is ready, transfer it to a large pot or steamer. Add 4 tablespoons of butter, allowing it to melt and coat the grains evenly. Stir gently with a fork to fluff the grains and ensure the butter is well distributed.
  3. Sprinkle 4 tablespoons of sugar and 2 teaspoons of cinnamon over the grain. Toss gently to combine, ensuring each grain is coated with the sweet and aromatic mixture. The grains should appear glossy and fragrant, with a warm cinnamon aroma.
  4. Prepare to assemble the dish by mounding the sweetened grain mixture onto a large serving platter. Use your hands or a large spoon to shape it into a tall, rounded mound, reminiscent of a sand dune.
  5. Decorate the mound by scattering 80 g (3 oz) of toasted almonds and 60 g (2 oz) of raisins over the top. The almonds should add a crunchy texture, while the raisins provide bursts of sweetness.
  6. Serve the Sweet Seffa warm, placing it in the center of the table as a delightful conclusion to your meal. The combination of sweet, nutty, and spicy flavors should be inviting and comforting, perfect for sharing with family and friends.
