Baba Ganoush

Baba Ganoush is a staple of Levantine cuisine, deeply rooted in the traditions of Mediterranean cooking. Often served alongside freshly baked pita and a spread of vibrant mezze, this dish captures the essence of casual gatherings and everyday meals. The key is in the simplicity of its components, which are as timeless as the olive groves and lemon trees of its origin.

The taste of Baba Ganoush is a harmonious blend of smoky eggplant, creamy tahini, and bright lemon juice, punctuated by the warmth of garlic and the freshness of parsley. Each bite is a reminder of sun-drenched gardens and sea-kissed breezes, making it a perfect centerpiece for any Mediterranean table.

Ingredients

  • 2large eggplants
  • 3 tbsptahini
  • 2 clovesgarlic
  • 60 mllemon juice
  • 3 tbspextra virgin olive oil
  • handfulparsley
  • to tastefine sea salt

Method

  1. Begin by preheating your oven to 400°F (200°C). Place the 2 large eggplants directly on a baking sheet lined with parchment paper. Pierce each eggplant a few times with a fork to allow steam to escape during roasting. Roast in the oven until the skin is charred and the flesh is very soft, about 30-40 minutes. The eggplants should collapse slightly and the skin should be wrinkled and darkened.
  2. Remove the eggplants from the oven and allow them to cool slightly until they are safe to handle. Once cooled, cut the eggplants in half lengthwise and scoop out the flesh with a spoon, discarding the skins. Place the flesh into a large mixing bowl.
  3. Add 3 tablespoons of tahini to the eggplant flesh in the bowl. Use a fork or potato masher to blend or mash the mixture until it reaches a smooth yet slightly chunky texture. The mixture should be creamy but still have some texture from the eggplant.
  4. Peel and finely mince the 2 cloves of garlic. Slowly incorporate the minced garlic, 60 ml of lemon juice, and 3 tablespoons of extra virgin olive oil into the eggplant mixture. Stir gently to combine, ensuring the ingredients are evenly distributed throughout the mixture.
  5. Season the Baba Ganoush with fine sea salt to taste. To check the seasoning, spread a small amount on a piece of bread or a vegetable stick. Adjust the salt as needed to enhance the flavors.
  6. Allow the Baba Ganoush to rest for about 10 minutes to let the flavors meld together. Before serving, drizzle a little extra virgin olive oil on top and garnish with a handful of chopped parsley. Serve cool, enjoying the creamy texture and the bright, fresh flavors reminiscent of the Mediterranean.
