Ingredients

Method

  1. Begin by preparing the base for the Brasileiro Pepper Dip. Take 3 roasted peppers and place them in a blender or food processor. Add 2 cloves of garlic, peeled and roughly chopped. Blend until you achieve a smooth, vibrant paste, ensuring there are no large chunks of pepper or garlic remaining. The mixture should be thick but spreadable, with a consistent texture throughout.
  2. Slowly incorporate the olive oil into the pepper mixture. With the blender running on a low setting, gradually pour in 60 ml of olive oil in a thin stream. This will help emulsify the mixture, giving it a creamy and cohesive texture. Stop blending once the oil is fully integrated and the dip has a glossy sheen.
  3. Add the juice of one lemon to the mixture, blending briefly to combine. The lemon juice will add brightness and balance to the richness of the olive oil. Taste the dip to ensure the acidity is to your liking; it should have a fresh, zesty undertone without overpowering the peppers.
  4. Season the dip with fine sea salt to taste. Start with a small pinch, blend, and then taste by spreading a small amount on a piece of bread. Adjust the salt gradually, as it should enhance the flavors without making the dip overly salty. The garlic should add a gentle warmth and depth to the flavor profile.
  5. Allow the dip to rest for about 10 minutes at room temperature. This brief resting period lets the flavors meld together, enhancing the overall taste. Once rested, the dip should be served cool, ideal for spreading on bread or as a complement to other dishes.
