Chermoula

Chermoula, the vibrant green marinade of Morocco, is a cornerstone of flavor that transforms dishes into a symphony of tastes. Originating from the coastal regions, it is a quintessential element in Moroccan cuisine, particularly cherished for imparting its distinctive character to fish, liver, and vegetables. This marinade is not merely an addition but a passport to authenticity, often gracing tables during festive gatherings or as part of a mezze spread.

Chermoula's bold blend of cilantro, parsley, cumin, and paprika, enhanced by garlic and lemon, transforms fish into a fragrant delight and enriches any mezze table with its herbaceous essence.

Ingredients

  • 1 large bunchfresh cilantro
  • 1 bunchfresh parsley
  • 4garlic cloves
  • 1 tbspcumin
  • 1 tbsppaprika
  • 1 tspcayenne — optional
  • 1 tspsalt
  • 1lemon, juiced
  • 120 ml (1/2 cup)olive oil
  • 1 tspground ginger — optional

Method

  1. Start by washing the large bunch of fresh cilantro and the bunch of fresh parsley under cold running water to remove any dirt or grit. Shake off excess water and pat them dry with a clean kitchen towel. Remove the thick stems and finely chop the leaves and tender stems. Place the chopped herbs in a medium-sized mixing bowl.
  2. Peel the 4 garlic cloves and mince them finely. Add the minced garlic to the bowl with the chopped herbs. You can also use a food processor for this step, pulsing briefly to achieve a coarse paste. Be careful not to over-process, as you want the mixture to have some texture.
  3. Add 1 tablespoon of cumin, 1 tablespoon of paprika, 1 teaspoon of cayenne, and 1 teaspoon of salt to the herb and garlic mixture. Stir these dry spices in thoroughly, ensuring they are evenly distributed throughout the paste.
  4. Cut the lemon in half and squeeze the juice into the bowl, making sure to catch any seeds. Pour in 120 ml (1/2 cup) of olive oil. Mix everything together with a spoon or a spatula until the mixture is well combined and spoonable, with a slightly thick consistency.
  5. Taste the chermoula to ensure it has a balanced flavor profile. It should be salty, sharp from the lemon, and vibrant with the freshness of the herbs. Adjust seasoning if necessary, adding more salt or lemon juice to taste.
  6. Allow the chermoula to rest for 20 minutes at room temperature. This resting period allows the flavors to meld together, enhancing the overall taste.
  7. Use the chermoula as a marinade or sauce for fish, liver, or vegetables. It can also be served as a dip with bread. The chermoula should coat the food evenly, imparting its distinctive Moroccan flavor.
