Chinese Chickpea Dip

It's a recipe that's been passed down, capturing the essence of familial warmth and culinary intuition.

Expect a smooth, creamy texture with a rich nuttiness from the tahini, balanced by the bright acidity of lemon juice. The cumin adds a layer of warmth, while garlic brings an aromatic punch. This dip is meant to be shared, scooped with fresh vegetables or flatbread, embodying the spirit of communal dining without any pretense.

Ingredients

  • 400 gchickpeas
  • 2 tbsptahini
  • lemonjuiced
  • 2 clovesgarlic
  • 1 tspcumin
  • to tastefine sea salt

Method

  1. Begin by rinsing 400 g of canned chickpeas under cold water to remove any excess salt and preservatives. Drain them thoroughly and transfer to a large mixing bowl or a food processor. If using a mortar and pestle, work in batches to ensure a smooth texture.
  2. Add 2 tbsp of tahini to the chickpeas. Use a food processor or an immersion blender to blend the mixture until it becomes a coarse paste. If using a mortar and pestle, pound steadily until the chickpeas and tahini are well combined and the mixture is smooth with a few small chunks.
  3. Slowly incorporate the juice of one lemon into the chickpea mixture. If using a food processor, drizzle the lemon juice in while the machine is running. This gradual addition helps to emulsify the mixture, creating a creamy texture.
  4. Peel and finely mince 2 cloves of garlic. Add the garlic and 1 tsp of cumin to the chickpea mixture. Blend or stir until the spices are evenly distributed, enhancing the aroma and flavor of the dip.
  5. Season the dip with fine sea salt to taste. Start with a small pinch, mix well, and taste the dip using a piece of bread. Adjust the salt gradually, ensuring it complements the other flavors without overpowering them.
  6. Allow the dip to rest for about 10 minutes at room temperature. This brief rest period helps the flavors meld together, creating a more harmonious taste.
  7. Serve the Chinese Chickpea Dip cool, garnished with a drizzle of olive oil if desired. Present it with bread or fresh vegetables for dipping, inviting everyone to share in this flavorful dish.
