Cucumber Raita

Serves 4 to 6 vegetarian

Cucumber Raita

Cucumber Raita is a staple at Indian family meals, often accompanying a thali spread. This version reflects the home-cooked approach where each element is balanced by feel rather than strict measurements. It is a dish that seamlessly fits onto the table, its simplicity enhancing the rich flavors of its companions, be it spicy curries or fragrant rice.

The cool creaminess of yogurt meets the crisp, refreshing bite of cucumber, creating a contrast that is both soothing and invigorating. Roasted cumin and a hint of chili powder add depth, while fresh mint brightens each bite. It's a harmonious blend of textures and flavors, perfected by a pinch of fine sea salt, inviting you to savor its subtle complexity.

Ingredients

  • 300 gyogurt
  • 1cucumber — grated
  • 1/2 tsproasted cumin
  • 1 handfulmint
  • 1 pinchchili powder
  • to tastefine sea salt

Method

  1. Start by preparing the base for your Cucumber Raita. In a mixing bowl, add 300 g of yogurt. Whisk it gently until smooth and creamy, ensuring there are no lumps. This will give your raita a silky texture and help it blend well with the other ingredients.
  2. Peel and grate the cucumber using a medium-sized grater. Squeeze out any excess water by pressing the grated cucumber between your palms or using a clean kitchen towel. This step is crucial to prevent the raita from becoming too watery.
  3. Add the grated cucumber to the yogurt. Stir gently to combine, ensuring the cucumber is evenly distributed throughout the yogurt.
  4. Next, add 1/2 tsp of roasted cumin to the mixture. This spice will add a warm, earthy flavor to your raita. Stir well to incorporate the cumin thoroughly.
  5. Finely chop a handful of mint leaves and add them to the bowl. The mint will provide a fresh, aromatic note that complements the coolness of the cucumber.
  6. Sprinkle a pinch of chili powder over the mixture. This will add a subtle heat and depth of flavor. Mix everything together until the chili powder is evenly dispersed.
  7. Season the raita with fine sea salt to taste. Start with a small amount, mix, and taste. Adjust as necessary, keeping in mind that the salt will enhance the flavors of the other ingredients.
  8. Allow the raita to rest in the refrigerator for at least 15 minutes. This resting period helps the flavors meld together and enhances the overall taste. Serve the raita cool, as a refreshing side dish.
