Method

  1. Begin by preparing the base of your dip. In a blender or food processor, combine 400 g of yogurt with a generous handful of your choice of fresh herbs. Common options include cilantro, parsley, or perilla leaves. Blend until the mixture is smooth and the herbs are finely incorporated, resulting in a vibrant green color throughout the yogurt.
  2. With the blender still running on a low setting, slowly drizzle in a small amount of olive oil. This will help emulsify the mixture, giving it a creamy and slightly thicker texture. The goal is to integrate the oil without breaking the yogurt's smooth consistency.
  3. Peel and finely mince 2 cloves of garlic. Add the minced garlic to the yogurt-herb mixture, blending briefly to incorporate. Taste the dip on a piece of bread to gauge the flavor balance, then add fine sea salt to taste, blending again to ensure the salt is evenly distributed.
  4. Once seasoned to your liking, transfer the dip to a serving bowl. Allow it to rest in the refrigerator for about 15 minutes. This brief resting period helps the flavors meld together, enhancing the overall taste.
